Caprese Shrimp Salad

"This is a seafood caprese salad for unique occasions, such as Christmas eve in Italy whilst we've one fish route after the other! It is made of caramelized tomatoes, poached prawns, and buffalo mozzarella, with an introduced crunch from toasted breadcrumbs."

Ingredients :

  • 12 cherry tomatoes, halved and seeded
  • 1 teaspoon white sugar
  • 1 pinch oregano
  • 1 celery stalk, chopped
  • 1 carrot, chopped
  • 1 onion, chopped
  • 1 teaspoon peppercorns
  • salt and floor black pepper to taste
  • 8 massive shrimp, peeled and deveined
  • 1/2 (8 ounce) ball fresh buffalo mozzarella
  • 1 slice stale bread
  • 1 1/2 tablespoons greater-virgin olive oil, divided, or to flavor
  • 2 tablespoons sliced black olives
  • 8 fresh basil leaves, or to flavor

Instructions :
